Garlicky Bruschetta

For Fathers day I was requested to make home made pasta. Yes, tons of work and I only make it for holidays. We'll save that for another blog post! Once the menu was decided I immediately started to crave the freshness of summer tomatoes so I chose to pair it with some garlicky bruschetta. I love this side dish because you can enjoy it as a fresh salad alone, scoop it on your Caesar salad or let it soak into some crusty bread (my favorite!) Since half my family is on Weight Watchers, I thought this is the perfect dish to serve everyone. I like mine super garlicky, but you don't have to use as much as I do in my recipe.

Garlicky Bruschetta

2 cups chopped tomatoes 

1.5 tbsp minced garlic (fresh or jarred, this is my favorite)

1 tbsp good olive oil

1 tbsp lemon juice

1 tbsp apple cider vinegar

1/2 tsp garlic powder

chopped fresh Italian basil (there's a difference, be sure not to use Thai basil in this recipe) 

Salt + Pepper to taste

Mix all the ingredients together and let marinate for an hour. This dish gets even better overnight. Serve on your favorite bread or favorite salad. This can also be topped with more Italian basil, feta cheese, shaved parmesan, your favorite fancy salt or avocado. I love spooning the juice over my toast to soak the bread, so yummy! Enjoy!
